My new knives have arrived. After a little ebay transaction I got the Henckels Professional S - 20 piece set and saved and a couple hundred bucks. I also have a small set of the five stars, but got tired of them because the back of the handles kept getting cut up by the adjacent knives in the block (not really all of them but I have to be careful not to hit other knifes as I'm taking one out or putting it back).

Anyway... they're here and I can't wait to start cooking. After my Peapod order gets here this weekend it's time to start chopping.

In case your wondering, the set includes:

    The cleaver gets my vote for the coolest knife in the set.

    now that you're going to be paying all that attention to the knife handles, don't forget to watch out for your fingers, too. it would be a shame to have a 20-piece knife set, and only a 9-piece finger set.

    and next time we're in dc, i'll look forward to our 8-person dinner party with all those steak knives. yum.

    by the way, one time when i was answering phones in the plan 2 office, a woman called to request an application for her daughter. i asked how to spell the name, and at one point she said "n as in knife." ...not exactly the sharpest knife in the 20-piece set. i didn't follow the application process all the way through, but i have a feeling her daughter may not have been plan 2 caliber either.

    ps: i'll look forward to ebert & roper's review of the use and care video. sounds like a nail-biter.

    Sounds like you've got all the gear to become a sushi chef and then maybe graduate to one of the twirling chefs at a Japanese steak house. Could be fun........
